I love mug cakes.  They make life worth living.  I am totally just kidding but they definitely make life easier when you want to enjoy a freshly made dessert.  Lemon is one of my favorite flavors because it is light, extremely fragrant and has amazing health benefits.

But when the cake is filled with refined sugars and flours along with other artificial flavors or ingredients, then those amazing health benefits all cancel out, so how can you have your cake and eat it too. Keep reading to find out!

Let Them Eat Cake!

As I said before, lemon has some great health benefits but is that even possible when it is mixed in a cake?  It is when you eat a cake that is made with other health promoting ingredients like almond flour, flax, coconut oil, and stevia or honey versus white flour, vegetable oil and refined sugar.

Those other ingredients easily cause weight gain (for so many more reasons), but mainly they cause a lot of inflammation and when you eat foods that DON’T cause inflammation (like the ones listed first), then you are not only able to lose weight but you are able to get the nutrients from those foods better too. So, everyone wins.

What About Those Benefits?

Before we get into the recipe, maybe you are interested in knowing what health benefits are in this super yummy, yet amazingly quick mug cake?  Well, since the base is almond flour you are getting some great fiber, vitamin E, iron, manganese, magnesium, potassium and even calcium.

Flax meal is a great addition because it brings omega 3, fiber, protein, vitamin B1, manganese, phosphorus, and selenium. Plus using coconut oil gives you some other wonderful health benefits like the ability to absorb those vitamins and minerals that we just talked about!

Oh, and let’s not forget the lemon, because that is not only what gives this cake it’s amazing flavor but it also gives you a dose of Vitamin C, some B6, copper, potassium and magnesium.  Those are all wonderful things your body needs to stay healthy and happy daily.

So, the next time someone tells you that you can’t eat cake, lose weight, and be pumped with vitamins and minerals, simply share this recipe with them and prove them wrong.😉 But without further ado…the recipe!

Super Charged Lemony Mug Cake

(single serving)

Ingredients:

  • ¼ c almond flour
  • 2 tbsp. flax meal
  • 1 tbsp. honey or ¼ tsp stevia
  • ½ lemon (juice and the zest)
  • ½ tsp baking powder
  • Dash of salt
  • 1 tbsp. coconut oil melted
  • 1 large egg

Directions:

  1. In a microwave safe mug, melt the coconut oil in microwave for 10 to 15 seconds depending on how solid
  2. Add to it the egg and whisk
  3. Add the lemon zest and juice, almond flour, flax meal, sweetener of choice, baking powder, salt and whisk together until combined well.
  4. Place mug with mixture back into the microwave for about 1 minute and 20 seconds
  5. Allow to cool and enjoy! You can even top with homemade whipped cream and enjoy!
