Guacamole is one of my most favorite things. I love it best fresh and on top of a nicely cooked chicken breast. But I have also been known to eat it with a spoon. Yup! Totally guilty of that.
My love affair first started when I moved to Tucson from Maine years ago and I never looked back. I use to feel guilty for eating it because I was always told it was loaded with FAT and therefore it was horrible for me.
Have no fear my friends, it is indeed a good kind of fat and eating it won’t make you fat…so eat on! Guacamole is actually really healthy for you to eat regularly and that is because it is mainly made up of avocados.
I use to eat an avocado every day, but since moving up to WA state, they just aren’t as good honestly as what I would get in Tucson. I know, I am picky but when I do buy them I make guacamole and I have an amazing recipe to share with you today!
This recipe will take your traditional guacamole recipe from awesome to amazing by adding ONE ingredient that we all know is super for us, but adding it to guacamole? Stay tuned.
More About Avocados!
Before I go into this super awesome recipe, it is worth sharing with you all the wonderful things avocados can do for your body. The more you know, the better…especially when it comes to what you put in your body…at least that is what I think.
Avocados are full of monounsaturated fats unlike many other fruits. Monounsaturated fats are known to reverse insulin resistance, regulate your blood sugar, and help to protect your heart against disease, plus cancers, and even declining of brain functions. YAY!
They are full of fiber, potassium, vitamin A, K, E, vitamin C and B-Vitamins too! Because it is full of fiber and water, it is incredibly satiating which makes it great for weight loss.
Other amazing things about avocados are that they are also rich in phytonutrients and antioxidants. So, by adding more avocado to your day along with other nourishing foods, you can help reverse oxidative damage and reduce inflammation which we all know if important to weight loss.
And Now…The Recipe
Not Your Mother’s Guacamole
- 2 ripe avocados
- 2 cloves garlic
- ½ jalapeno (more if you like it spicy)
- 1 cup kale
- ½ cup red onion
- 2 tbsp lime or lemon (pick your fave)
- ¼ tsp salt (pink if you got it)
- ½ tomato (or all if you like it a lot)
- 2 tbsp cilantro (more if you love it like me)
- Chop up all your ingredients into bite size pieces. (you wouldn’t want a mouthful of onion would you)
- Mash up your avocado, then stir in the rest of your ingredients.
- Serve right away or cover over night but be aware the color may turn.
My favorite way to eat it is fresh and right away. You can eat it with some tortilla chips if you like or do what I do, and add it on top of chicken. You could also just eat it with some other veggies like peppers, celery etc.
By adding kale to the mix, you not only get a pretty green color but you also get more added health benefits like more fiber for digestion awesomeness, plus vitamin A, K, C! The more vitamins the merrier!
