Everyone loves Mac n Cheese.  Perhaps you grew up with it and find it a comfort food when life gets a little stressed.  Perhaps you just know it as the blue box, but either way SO many people love it and eat it.

The issue with all of this warmth and happy hugs from food, is that its not that nutrient dense.  And so today, I want to share a wonderful recipe with you that gives you the comfort food you want but in a way that is also comforting to your body.

So give this recipe a go, add a protein of choice to it or alongside of it and even add some more veggies to it.  Make it yours.  There is so much more you can do with it so go and have fun with your food.

Grain Free Comfort Mac n’ Cheese

Serves 4


  • 6 medium zucchini spiraled (4 lb. large – or bought already spiraled)
  • Salt
  • 1 1/2 c cheddar cheese (of choice, can even use dairy free)
  • 3/4 Parmesan cheese (or dairy free choice)
  • 1/2 c full fat Greek yogurt (or coconut yogurt)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp turmeric
  • Salt and Pepper to taste


  • 1/2 cup Parmesan cheese
  • 1/4 c almond flour
  • 1/2 tsp garlic powder
  • Pepper to taste


  1. Bring pot of water to boil, add salt
  2. Add zucchini to water, make sure they stay separated, for about 2 to 3 minutes.
  3. Drain noodles, using a kitchen towel place them in towel and squeeze as much water out as possible but be careful as they are super hot. Do this twice to make sure they are completely drained of as much water as you can and then place on a baking sheet to separate them…the best you can.
  4. Using same pot, on medium-low heat place noodles in pot and add cheeses.  Add cheeses on noodles small handfuls at a time until completely melted.
  5. Once cheese is melted, add yogurt until mixed.
  6. Stir in seasonings and then transfer to baking dish.
  7. Preheat oven to 400 degrees
  8. Mix in a bowl the Parmesan, almond flour and garlic powder and pepper together
  9. Sprinkle on top of the zucchini noodles and heat in over on top rack until golden
  10. Enjoy!
