It shouldn’t really even be even a question whether you should fritter your zucchini or not.  The answer should just be…YES! Or it will be after you learn what I am about to lay down.

The recipe I am going to share with you this week, is of course, zucchini fritters.  Zucchini is a vegetable that has gotten a lot of good press lately with the infamous zucchini noodles, but there is so much more to this super veggie.

More Than Meets the Eye

Zucchini is a summer squash that is technically a fruit, even though it is treated as a vegetable by being added to savory dishes.  My favorite thing to do with zucchini besides fritters, is to make a gratin out of it. YUM!

There is nothing better than a veggie grain in my book, but it is so much more than just yumminess! You can also make soup out of it or zucchini fries.

It is low in calories of course, and high in water content like cucumbers, which makes them great for weight loss.  They are also high in fiber (eat the skin) and rich in antioxidants which we all need to help keep us looking great as we age.

They provide us with an amazingly high potassium content (even more than a banana) and then add into the health profile a mix B Vitamins such as folate, B6, B1, B2, B3, choline and minerals we all need like Zinc and Magnesium…and WOW! Awesomeness.

And Now the Recipe

It is hard to wait sometimes so why make you wait any longer… here is the best zucchini fritter recipe (in my opinion).

Zucchini Fritters


2 zucchinis (small to medium, grated)

2 green onions (chopped, diced, sliced…not whole)

¼ c almond flour

¼ c pepper jack (shredded, or any other cheese that makes you happy)

2 whole eggs (beaten)

1/2 tsp garlic powder

Salt & Pepper to taste



  1. Take your grated zucchini, add salt, place in a clean kitchen towel, squeeze out any extra liquid the best you can.
  2. Place grated zucchini in bowl, add beaten eggs, chopped green onions, almond flour, cheese of choice, pepper, garlic powder (or any other spices you want), and then mix together.
  3. Get out a frying pan, heat with about 2 tbsp. oil (coconut, olive or avocado) and wait for it to come up to a medium to high temp.
  4. Place fritter mixture into hot pan using a heaping tablespoon, fry until golden brown on both sides. (about 3 minutes depending on stove)
  5. Soak up extra oil by placing on paper towel prior to plating.
  6. Serve with sour cream and top with more green onion.

Or You Could…

If you didn’t want to add sour cream and green onions, you could treat them like potato latkes and serve with apple sauce too.  Other options are to top with bacon, more cheese if you fancy, or avocado.  The skies the limit with these wonderful fritters and that goes for the spices you add as well.

I love playing with spices and making recipes my own, so try whatever sounds good to YOU.  There is no right or wrong way to season, or top this easy and healthy dish.

These make a great appetizer, side dish or just meal really.  It all depends on you!
