I love muffins as much as the next girl, but traditional muffins don’t really like me. They are filled with lots of sugar, gluten and depending on where you get them…could be much worse. (yikes)
There are so many different types of muffins to enjoy however. Besides the traditional gluten filled variety, there are also egg muffins. Those can also be called frittata muffins, or scrambled egg muffins, etc. The names can go on and on.
But for today’s recipe, just know them as egg muffins. I also love these types of muffins best because they don’t cause bloating, they help me to lose weight (no thank-you muffin top), they satiate me, AND they are a mom’s best friend in the morning!
They can be made ahead of time (weeks even), just freeze them and then take out as needed. I love to use these as a quick complete meal for myself, my kids, or you could even send them out the door with the husband in the morning!
Hell, you could even send them over to your neighbor if that’s how you roll. Either way, they are fantastic to have on hand and IN your hand!
These bad boys help me to stay on track with my health goals, give myself a protein packed start to my day and all with little to no fuss. So, without further ado…here is my favorite and EASY as hell, egg muffin recipe.
Easy Peasy Egg Muffins
- 12 whole Eggs
- 1 C milk
- ½ tsp salt
- ¼ tsp pepper
- 2 C shredded Cheese (Any kind you love, I love pepper jack)
- 1 ½ C chopped zucchini
- ½ C bell pepper
- 4 Tbsp chives
- Preheat 350 degrees
- Beat the eggs, salt and pepper plus milk together.
- Add your zucchini, bell pepper, chives, cheese, and mix well
- Grease your muffin tin with non-stick spray or coconut oil
- Add mixture as evenly as possible to all 12
- Bake for 20 to 22 minutes, until egg is set (not runny)
- Cool for about 5 minutes
- Either serve right away or cool completely and then freeze
But Why Eggs
Eggs are a wonderful and inexpensive protein source. They are very much underrated. They get a lot of crap for cholesterol but honestly, it’s not the eggs fault. It’s the highly-processed foods in the diet along with the eggs that causes the problem.
So, before you dismiss eggs from your diet for good…rethink the rest of what you eat first, especially where weight loss in concerned. Eggs have SO many vitamins and minerals in them such as B2, B6, Selenium, B12, Zinc, Iron, Copper, Vit. D etc.
You need these highly nutritious foods in your life regularly, and less of the “crap” foods like those tasty, yet highly processed ones you find throughout the supermarket. These egg muffins are a great way to start eating better, as well as the best way to start your day!
