I love trail mix, but I don’t love all the added junk to so many of them that are readily available.  You know, all the sugary coated and covered stuff that is added to many of the store made mixes.  They are yummy (I won’t lie) but they aren’t something you would want to eat for a snack regularly for weight loss or just health in general.

What I love to do is make my own and keep it on hand for those busy times I need a snack, yet I am in between meals.  It isn’t hard to make and you won’t get the surge in blood sugar that can be a nightmare to recover from later when you don’t eat or when you eat the wrong things.

What I Do

It is easiest to make a big batch at the beginning of the week, and then store it in a large container.  You can take it with you to work, keep in your car (wherever) and have it for those times when you need a little something…especially when meal time is far off.

Snacks don’t have to be complicated, they just have to work for you and this one works well for me so I am hoping it will also do the same for you.  It will satiate you, stabilize your blood sugar and give you a boost of energy to keep you going strong!

My Favorite Recipe

Energy Boosting Trail Mix

Ingredients:

  • 1 cup raw cashews
  • 1 cup raw pecans
  • 1 cup dried blueberries
  • 1 cup sunflower seeds
  • ½ cup unsweetened shredded coconut
  • 1 tsp vanilla extract
  • 2 T coconut oil
  • 1 tsp sea salt
  1. Preheat oven to 350 degrees
  2. Mix all the dry ingredients in a bowl. In another bowl stir together the oil & extract until combined.
  3. Pour liquid mixture into the bowl with the dry ingredients and mix until everything is coated.
  4. Spread the mixture onto a lined baking sheet. Bake for about 20 minutes, stopping to shake the mixture around every 10 minutes.
  5. Let cool completely before storing.

What Else?

Besides just eating it as it is you could easily add this to your Greek yogurt for another snack option or treat.  I personally love it plain, but the limits are endless.

This not only will help you during the week for snacks but also give you a good healthy source of energy to get you through the day while also keeping your weight loss going.  It is easy to drop the ball and not eat when we are busy, but in order for you to lose weight you must fuel your body…but fuel it properly.
