I love the smell of banana bread baking in the oven. I grew up with a lot of homemade goodies around, so the aroma of banana bread baking in the oven sure does “take me back”.
It also “takes me back” to binging on all the goodies and weighing about double what I do now. Emotional eating was a BIG crutch for me for years, and one that I tried to hide, but of course the weight was the hardest to cover up.
Although bananas are a whole food, they are quite sweet, and on occasion a slice of banana bread is OK. But what if you are trying to live the clean life more than not, and are trying to keep onward with your goals.
For me, even one slice of something I loved would set me off. And until you have dealt with the emotional side of your weight loss journey, even a slice can easily turn into the whole loaf.
What’s the Solution?
Over the years I have made it my mission to redo my favorites and make things I love but without the blood sugar battles and guilt (nobody’s perfect). Banana bread is one of those things I decided to make better…healthier…and damn it, I think tastier.
We all know that gluten isn’t the healthiest for us. Gluten causes SO many more issues than we even understand, and although I do not like to kick any food to the curb…gluten is one I will happily send packing.
For me personally and so many others, eating gluten filled goodies kills my stomach. It didn’t always do that, it wasn’t until I omitted it for a time and then had it again that I saw the damage it could do.
It caused intense acne for myself, migraines, depression & crazy anxiety, constant exhaustion and brain fog, and of course SO MUCH weight gain. I am not alone in this and if you aren’t sure whether you have an issue with gluten or not…try getting rid of it for 2 weeks and see how much better you feel.
I hope you try this recipe and actually give it a shot. I personally think it tastes WAY better than traditional recipes, so you aren’t missing out. Almond flour is one I always have on hand and to me…the taste develops better.
This recipe uses the natural sugars in the banana to sweeten it along with a tad bit of spices and maple syrup to round it out. I think food should taste real and this recipe does just that!
The Real Deal Banana Bread
- 3 ripe bananas (brown spotty and squishy)
- 2 whole eggs
- 1 tsp vanilla extract
- 3 tbsp. raw honey
- 1 tbsp coconut oil
- 2 cups almond flour
- 1 tbsp. baking powder
- ¼ tsp pink Himalayan salt
- 2 tsp ground cinnamon
- ¼ tsp ground nutmeg
- Preheat oven to 350 degrees
- Grease loaf pan or nonstick spray
- Mix wet ingredients together (bananas, eggs, honey, coconut oil, & vanilla)
- In another bowl, sift together the dry ingredients (almond flour, spices, & salt)
- Add wet ingredients to dry and mix until combined
- Pour mixture into greased loaf pan evenly
- Bake for 45 to 55 minutes (until toothpick is clean)
- Allow to cool for about 20 minutes before taking out of pan and serving
What Else Can You Do
I love this bread as is for a nice treat when I really want a comfort food or with a cup of coffee in the morning because I am sick of eggs. Either way, just make it and eat it. You will thank me later.
If you really want to get crazy, then you could totally make French toast with it and serve it up as a Father’s Day surprise. Add some whip cream, fresh fruit and knock dad’s socks off! Any way you slice it, this banana bread won’t go to waste.
It also freezes nicely, so if you aren’t ready to have an entire loaf around but want to use up some of those overly ripe bananas, then problem solved and enjoy the loaf later.
